Umberto opened Proibito in December 2023 and it has since been a gathering spot for people to relax, grab a drink, and converse. The name Proibito means forbidden, as this business was something new that Ariccia hadn't seen before. Umberto moved from Rome to Ariccia years ago and chose to stay and invest in the small town due to its incredible community while still being in close proximity to larger cities. When asked what his key to success is, Umberto said that "your love for the job is the most important thing. People will notice and support you.
